chocolate cheesecake cupcakes


Hello :) We had a lot of eggs at the apartment this week sooo much baking happened. Here's one of the things I tried out: chocolate cheesecake cupcakes! It was actually my first time making these, but I used bits and pieces of old recipes and just mixed them together. So this is a mash-up of my chocolate cake recipe and my cheesecake marbling recipe (for brownies). And it turned out quite nice, perfect for a birthday surprise :)

Things you need
For cupcakes:
two eggs
1 cup milk
1/2 cup vegetable oil
1/2 cup water
2 tsp vanilla
1 1/2 cup sugar
1 3/4 cup flour
2/3 cup unsweetened cocoa
1 1/2 tsp baking soda
1 1/2 tsp baking powder
1 tsp salt

For cheesecake:
8 oz. cream cheese
1 egg
1/3 cup sugar
1/2 tsp vanilla
chocolate chips (optional)
Things you do
1. Separate the egg whites from the egg yolks and whisk or beat the egg whites in a large bowl until they are white and fluffy (see picture below). Be patient! This could take a while if you're doing it by hand.
2. Add in the egg yolks, milk, oil, water, and vanilla. Once that's mixed, stir in the sugar.
3. Sift in the flour and cocoa powder, as well as the baking soda, baking powder, and salt. Let it rest once it's smooth. **It'll be quite thin, not thick and gloopy like most standard recipes.
4. For the cheesecake part, let the cream cheese come to room temperature, and then mix with sugar until smooth. Add in the egg and vanilla. It's okay if this is a little lumpy.
5. Preheat the oven to 350ºF and line two cupcake trays.
6. Fill each cup about halfway with the chocolate batter and then place a tablespoon-sized scoop of the cream cheese mix in the center. Fill up to about a centimeter below the rim with more chocolate batter. It's okay if the cream cheese is not completely covered!
7. Bake for 15-20 min or until your toothpick comes out clean. Cool on a rack and enjoy :)
