peanut butter cookies



Happy Tuesday, friends :)

This week we open the jar of one of the essentials of baking: cookies! This version of peanut butter cookies is just the first of MANY cookie recipes, and in my opinion, one of the easiest and yummiest when trying to impress your friends with your baking skillz :P Just make sure they're not allergic to peanut butter...

Things you need:
1/2 cup butter
1/2 cup peanut butter 
1/2 cup white sugar 
1/2 cup light brown sugar 
1 egg 
1 1/2 cup flour 
3/4 tsp baking soda 
1/2 tsp baking powder

Makes 2 dozen cookies
Things you do: 
1. Preheat your oven to 350ºF. 
2. Mix together the butter at room temperature and peanut butter, then add in the sugars. 
3. Once those are well mixed, stir in the egg. 
4. Sift in the flour, baking soda, and baking powder. 
5. Line 2 baking sheets with aluminum foil (for easy clean-up) or leave them ungreased. Scoop out the dough in tablespoon-sized lumps and place them, unflattened, on the baking sheet. MAKE SURE you leave at least 1-2 inches between the cookies. These expand quite a bit! 
6. Bake for 10 min, switching racks or turning them around at 5 min. They will be SUPER soft when they come out, but don't overbake! They'll harden to a crunchy-on-the-edges, chewy-in-the-middle goodness when they cool :) 
7. After they've hardened enough to slide off without crumbling, transfer to a rack to cool and serve with a nice cold glass of milk :)
