Got a couple bananas lying around, too ripe to eat but not black enough to throw out? Stick 'em in the oven!...with some other stuff of course.
Starting off simple with the tried and true banana bread recipe :) I don't even remember where I found this recipe, but honestly I didn't change much, except maybe the sugar ratio. Anyway, it's easy to make and perfect for potluck desserts or homey breakfasts. Or Bible studies ;) Have fun and enjoyy!
Materials
1/2 cup butter
1/4 cup white sugar
1/4 cup light brown sugar
3 ripe bananas
2 eggs
2 cups flour
1 tsp baking soda
1/4 tsp of salt
3/4 cup walnuts
3/4 cup craisins
a handful of sweetened coconut flakes :) |
Procedure
1. Preheat the oven to 375ºF (wow I almost put 375ºC.....too much orgo lab).
2. Mix together butter at room temp. with both sugars. Once it's nice and smooth, add in the smooshed bananas and eggs.
3. Mix, mix, mix and then sift in the flour, baking soda, and salt.
4. Toss in the craisins and walnuts (you may want to break up the walnuts to match the size of the craisins, unless you like chunky :) Always feel free to add a bit more if you're feeling adventurous!
5. Scoop the gloopy batter into an oiled bread pan and smooth down the top a bit. Spinkle on your handful (or more) of coconut flakes.
6. Bake for 30 minutes, then switch racks or turn it around so that it bakes evenly. Then bake for another 30 minutes until you can poke it with a toothpick and it comes out clean. Allow to cool until it's not too hot to touch, and dig in!
