peanut butter nutella rice crispy treats


After a rather long period of struggling to create new recipes, autumn has bestowed upon this little baker some new inspirations and ingredients. Rooting around in my pantry at home, I discovered 2 half-finished bags of marshmallows and some leftover rice crispy cereal. Perfect for some rice crispy treats, fall edition :)


Things you need:
For the treats:
3 tbsp butter
1 pack marshmallows (10 oz)
1/2 cup peanut butter
6 cups rice crispy cereal
For the glaze:
2 tbsp Nutella
1 tbsp milk
1 tbsp powdered sugar
Things you do:
1. Melt the butter into a large non-stick pot or pan at medium heat. As it melts, swirl it around so that it coats the sides of the pan.
2. Pour in the marshmallows and stir with a wooden spoon or spatula until they melt too. Add in the peanut butter and mix well.
3. Turn off the stove and add in the rice crispy cereal. Fold it in until evenly combined with the marshmallows.
4. Scoop out the mix into a baking dish (no need to grease). Wet the wooden spoon or spatula and press the cereal down firmly. Leave to cool.
5. For the nutella glaze, mix the nutella, milk and powdered sugar in a small bowl. If it does not combine will, microwave for 10 seconds at a time until it mixes smoothly.
6. Once the rice crispy treats are cooled down, drizzle the glaze on top. Once that cools, it's ready to be cut and served :)
