pistachio white chocolate chip cookies


Well hello, it's been a while (apologies on behalf of finals). Tried out a new recipe this week! Starring the leftover pistachios of Miss S that were dug out in the process of moving out of Newell 55 (sad faceee). They turned out a tad too sweet but nothing a little milk couldn't fix :) Also not the prettiest of cookies but we only care about the taste, right? ;P 


Things you need:
1 cup butter
1/2 cup white sugar
1/2 cup light brown sugar
2 eggs
1 tsp vanilla (or almond extract)
1/2 cup oats
2 1/2 cups flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup crushed pistachios
1 cup white chocolate chips
Things you do:
1. Preheat your oven to 350ºF.
2. Mix the butter with the white and brown sugar until creamy. Add the eggs and vanilla and mix well.
3. Stir in the oats and flour with baking soda, baking powder and salt.
4. Using a food processor or blender, chop the pistachios into small-ish chunks (see picture). Add to the mix along with the chocolate chips.
5. Drop tablespoon-sized dough on ungreased baking sheets. Bake for 10 min, switching racks in the middle.
6. Cool on a rack and serve with milk :)
