key lime pie



I always thought key lime pie was green. It's not. It's a lovely sunshine-y yellow that just makes you want to smile :) So smile. And try new things. Because you can't really go wrong with graham crackers and an entire can of condensed milk :D (recipe tweaked from epicurious.com) 
Things you need:
For the crust:
8-9 graham crackers (whole)
5 tbsp melted butter
2 tbsp sugar

For the filling:
14 oz condensed milk
4 large egg yolks
1/2 cup lime juice (1&1/2 limes)

For the topping:
3/4 cup whipped heavy cream 
1/4 cup toasted coconut flakes
Things you do:
1. Preheat your oven to 350ºF.
2. Crush up the graham crackers in a large ziploc bag. The finer, the better! Pour it into a bowl and mix in the sugar.
3. Melt the butter and stir it into the graham cracker mixture. Once it's spread evenly throughout, pour the crumbly mix into your pie pan and press down. Try to make it as compact as you can but don't worry, it'll harden when you bake it.
4. Bake the pie crust for 10 min. Let it cool on a rake as you prepare the filling. Keep the oven on!
5. Mix together the egg yolks and condensed milk until it's nice and smooth. Then add in the lime juice (strain out pulp and seeds if you're using fresh limes) and stir slowly until combined.
6. Pour the filling into the slightly cooled crust and bake for 15 min. When it's done, it won't look that much different, but it'll be a lot stiffer. Cool it on a rack until it comes to room temperature, then chill it in the refrigerator until dessert time :) Don't forget to top with some whipped cream before you serve it!
